How to make MASALA PURI


                                     MASALA PURI


This is King among the North Indian chats like pani puri, dahi puri, tikki puri and corn tikki.                                                                      
                                                          
Ingredients    :

Dry peas                                                    2 cups
Potato                                                        2
Onion                                                        4
Tomato                                                      2
Tamarind                                                   1 lime size
Jaggery                                                      1 lime size
Groundnut oil                                            1 tablespoon
Red chilly powder                                      ½ table spoon
Garam masala powder                                ½ table spoon
Pudina                                                        some leaves
Green chilly                                               2
Coriander leaves                                       finely chopped
Curry leaves                                              10-15 leaves
Jeera                                                          1 teaspoon
Black pepper                                             1 tea spoon
Om pudi                                                    1 packet
Ready made poories of masala puri
Salt to taste.

Preparation :

Finely chop onion, tomato and coriander leaves.
In a cooker cook overnight soaked peas and pototo in a separate containers and set aside.
In a mixie make a fine paste of masala with pudina, green chillies, jeera, black pepper and salt.
Prepare tamarind pulp and heat it to a boil along with jaggery, red chillie powder and salt
to prepare meetha.

In a kadai, heat oil and fry onion to a golden brown. Add finely chopped tomatoes and fry. Then put the masala paste, add some water and cook. Then add one liter water.While boiling put the red chilly powder and garam masala powder, salt. add some curry leaves and coriander leaves. Smash the cooked potatoes to a fine paste and mix.
Add water if needed in such a way that the finally it should turn out to a proper gravy consistency of masala puri.

In a plate break 6-8 puris, on that pour masala, add a dash of meetha, finely chopped onions, tomatoes( if you like ) , finely chopped coriander leaves, om pudi and serve.

How to make TIKKI PURI




                                                                            
                                    

Ingredients :

Onion                                                        4
Tomato                                                      2
Carrot                                                         4
Red chilly powder                                      ½ table spoon
Pudina                                                        some leaves
Green chilly                                               2
Coriander leaves                                       finely chopped
Curry leaves                                              10-15 leaves
Jeera                                                          1 teaspoon
Black pepper                                             1 tea spoon
Om pudi                                                    1 packet
congress kadlekai                                       1 packet
ginger                                                         2 “
Puffed rice                                                  2 big cups
Ready made poories of masala puri
Salt to taste
Method  :

Finely chop onions, tomato, coriander leaves , grate carrot and set aside.

In a mixie make a green chutney with pudina, green chillies, jeera, ginger, black pepper and salt.

In a plate, put 6-8 puris, on each sprinkle the green chutney,  put finely chopped onions, grated carrots, coriander leaves, om pudi, congress kadlekai. On the top put fresh puffed rice and serve.

Like this you can also prepare other North Indian chats like pani Puri, Dahi Puri, Masala Puri and Corn Tikki.

How to make DAHI PURI




                                                                      
                                                                  DAHI PURI

Ingredients :

Dry peas                         100 gm
Onion finely chopped    4
Carrot                             2 grated
Pudina                             Few leaves
Coriander leaves            1 small bunch
Tamarind                        1 lime size
Jaggery                           1 lime size
Jeera                                1 tea spoon
Black pepper                   1 tea spoon
Green chillies                  2
Red chilly powder           1 tea spoon
Om pudi                          1 packet
Sweet curds                     1 packet  ( If you like sweetish flavour add sugar depending on
                                         your taste.
Salt to taste.

Soak dry green peas overnight and in the morning cook in a pressure cooker with a little salt. Take care not to over cook it.
Finely chop onions, coriander leaves , grate carrot and set aside.
In a mixie make a green chutney with pudina, green chillies, jeera, ginger, black pepper and salt.
Prepare tamarind pulp and heat it to a boil along with jaggery, red chillie powder and salt
to prepare meetha.

In a plate, put 6-8 puris, make a hole in each, and sprinkle the green chutney, meetha, put a few cooked peas, finely chopped onions, grated carrots,put fresh sweet curds,  coriander leaves, om pudi on the top and serve.

Preparation Time :     30 minutes
Cooking Time :          20 minutes

This is one of the tasty and healthy North Indian snacks like Masala Puri, Tikki Puri and Dahi Puri.

Ingredients :

Dry peas                         200 gm
Onion finely chopped    4
Pudina                            1 bunch
Coriander leaves            1 small bunch
Tamarind                        2 lime size
Jaggery                           2 lime sized
Tamarind pulp                1 cup ( for pani )
Jaggery soaked in water for an hour 11/2  cup ( for pani )
Jeera                                1 tablespoon
Black pepper                   1 tablespoon
Green chillies                  4
Red chilly powder           1 teaspoon
Om pudi                          1 packet
Salt to taste

In a mixie, grind to a fine paste pudina, green chillies, jeera and pepper. To this pulp add sufficient water and sieve to get pani. To this add tamarind pulp and jaggery soaked in water and salt to taste.

Puris can be prepared at home by using chiroti rava and urad dal flour but it is a better option to get the ready made puris from the market.

Serve the puris filled with cooked peas, meetha, chopped onion and sev puri along with pani.

How to make CORN TIKKI

Ingredients :

Carrot                                                         4
Red chilly powder                                      ½ tablespoon
Pudina                                                        some leaves
Green chilli                                               2
Coriander leaves                                       finely chopped
Curry leaves                                              10-15 leaves
Jeera                                                          1 teaspoon
Black pepper                                             1 teaspoon
Om pudi                                                    1 packet
congress kadlekai                                       1 packet
ginger                                                         2 “
American sweet corn                                 2 big cups
Ready made pooris of masala puri
Salt to taste
Method  :

Finely chop onions, tomato, coriander leaves , grate carrot and set aside.

In a mixie make a green chutney with pudina, green chillies, jeera, ginger, black pepper and salt.

Cook American sweet corn mix with a tea spoon of chaat masala, salt, one teaspoon red chilly powder and set aside.

In a plate, put 6-8 puris, on each sprinkle the green chutney,  put finely chopped onions, grated carrots, coriander leaves, om pudi, congress kadlekai. On the top put the sweet corn and serve.
